Greenmarket find: Early Tomatoes and Turkish Eggplant



Think you know which is the eggplant and which is the tomato? Guess again. Those yellow globes are Turkish eggplants, and the long skinny fruit is a 'green sausage' tomato, both from Yuno's Farm. These are some of the first tomatoes of the summer, almost certainly hothouse. The slim green tomatoes are very dense with a ratio of seeds to flesh that's similar to a Roma. The green sausage tomatoes are still green when fully ripe, and those pictured above are ready to be eaten sliced with a little salt, which is how I had them.

The Turkish eggplant is similar to an Italian eggplant in taste, if utterly separate in appearance. It can be salted, pressed, and broiled, or simply cubed and sauteed in olive oil. The shape lends itself very nicely to stuffing, and a baked Turkish eggplant with a tomato and parmesan stuffing would be an ideal late July dinner.

Leave it to Yuno's Farm to have the earliest and most stylish tomatoes of the season!
