Ramp Recipes: Cheffy Suggestions


Scarborough Farms props a board behind their lovely ramps and chefs add their ramp-loving graffiti describing their favorite use of ramps.
My addition would be ramp-potato soup.

Ramp Potato Soup

4 T butter
6 ramps, cut into ribbons
3 medium potatoes, peeled and cubed
4 cups chicken stock (or water, in a pinch)
salt to taste

Heat butter in large stock pot. Once butter has melted and foam has subsided, add ramps and saute until softened and fragrant. Add potatoes and stock and bring to a boil. Reduce heat and simmer for 10-15 minutes, until potatoes are tender. Cool, then transfer to blender and puree soup. Alternately, blend in the stock pot with a stick blender. Taste for salt and adjust if necessary. Serves four.
