Greenmarket Recipe: Cabbage and Apple Salad


1/2 small onion, sliced thin
3 c. shredded green cabbage or red cabbage
1/4 c. cider vinegar
3 T. olive oil
2 T. honey
1 t. salt
1/2 t. celery seeds
1/2 t. caraway seeds
2 small apples


1. In large bowl, combine shredded cabbage and sliced onion.

2. In small saucepan, combine vinegar, oil, honey, salt, celery seeds, and caraway seeds; stir over low heat until sugar dissolves.

3. Pour vinegar mixture over cabbage; toss thoroughly. Cover and allow to wilt.

4. Just before serving, stir in 1 peeled, chopped apple. Cut remaining apple into thin slices and arrange on top of salad. Makes about 6 servings.
