April is a Winter Month

The sun is out. Daffodils are blooming. Easter has passed and Passover is just around the corner. It's spring, right?


But no, not a single spring vegetable has had a chance to grow up yet. My seasonal menus are still filled with cold weather produce like root veggies, green cabbage, and sweet potatoes. Even squash is hard to find in these early spring weeks. April, in a way, is the bleakest month of the year.


In the meantime, this lovely smoked trout I bought at Max Creek Hatchery is cheering me up. I may cheat and serve him with some hothouse greens. Because the sun is shining. It feels like time, you know?
